jammy caramelized onions

INGREDIENTS

2 yellow or white onions, thinly sliced into half-moons
1-2 cups of chicken or vegetable stock (the amount depends on the size of your pan and how soft you want the onioins) you can use water, but broth adds flavor
2 tsp salt

DIRECTIONS

  1. add the onions and salt to a pan and cover in just enough chicken stock to cover the onions. cook on medium low uncovered. 
  2. allow the onions to brown on all sides by turning the heat up to medium and occasionally stirring. 
  3. add roughly a 1/4 cup of stock or water and gently scrape the pan with a wooden spatula or spoon to lift the fond up off the bottom of the pan. cook until evaporated. continue doing this until desired color and softness is achieved. you can make this up to 4 days in advance.
