AIR FRYER PORK WONTONS AND SEASONAL SALAD WITH SOY GINGER SAUCE

before the summer started, I made a list of several dishes that I wanted to make over the course of the summer. while I didn't get to many of those recipes, I knew I wanted to make time to make wontons. the issue that arose with that, however, was the fact that wontons aren't really a full dinner meal, and would likely end up with someone in my family wanting a second dinner 5 minutes after dinner. by serving the wontons with a salad full of seasonal, local veggies, I knew that they would leave us feeling fuller longer. i realized that i never posted the recipe for the wontons, but they were too good to not be posted!

INGREDIENTS

wontons
1 lb ground pork
1/4 c thinly sliced scallions
1/2 large carrot, finely grated
1/2 tsp garlic powder
1 tsp grated fresh ginger
1/2 tsp granulated onion
1 tbsp soy sauce
1/2 medium onion, diced
t tsp sesame oil
1/2 tsp oyster sauce
1 tsp sweet thai chili sauce
1 pack of wonton wrappers
dipping sauce / dressing
1/2 tsp sriracha
8 tbsp soy sauce
1/2 c sweet thai chili sauce
1 tbsp freshly grated ginger
2 tsp garlic powder
1 tsp granulated onion powder
2 tsp rice wine vinegar

chinese hot mustard (optional, but separate from the dressing sauce)

salad fixings
use whatever you have on hand/what's in season. I used mixed salad greens, halved cherry tomatoes, cilantro mini seedless cucumbers, and carrot ribbons made using a vegetable peeler.

DIRECTIONS

  1. make the filling by combining all of the wonton ingredients except for the wonton wrappers.
  2. fill the wontons by placing one wrapper on a flat surface with one of the points facing you. put one teaspoon of filling in the center, then fold the corner closest to you to the opposite corner, making a triangle. press down along the edges to seal. take the left corner and fold it to the center of the triangle. fold the right corner over the left. gently seal them together.
  3. repeat until you have used all of the wonton wrappers.
  4. mix up the dressing by combining all ingredients.
  5. spray air fryer with olive oil spray. lay a single layer of wontons down and spray with another spritz of oil. how many wontons you can do in a batch will depend on the size of your air fryer. i could do 8-9 per batch. 
  6. air fry at 340 for 4 minutes, flip, then cook for an additional 5 minutes.
  7. Assemble the salads and serve with wontons, dressing, and chinese mustard on the side.
