fluffy blueberry pancakes with citrus glaze

I'm not usually a big pancake fan, but recently I've craved something sweet and citrus-y in the morning. These pancakes are the perfect sweet treat for breakfast. The lemony glaze on top is the perfect compliment to the juicy blueberries. The baking soda and powder in the batter makes these pancakes so fluffy.

makes 3-4 large pancakes

INGREDIENTS

DRY:
2 c flour
2 tbsp white sugar
4 tbsp brown sugar
​1/2 tsp salt *see note
4 tbsp baking powder
​1/2 tsp baking soda
WET:
1/2 stick of butter, melted
1 3/4 c whole milk, or 1 cup skim milk + 3/4 cup heavy cream
1 egg, whisked
1 tbsp vanilla extract
1 tbsp lemon juice
zest of 1 medium orange

additional butter or nonstick spray for pan
2 cups fresh blueberries

GLAZE:
1/2 tsp lemon juice
juice of 1 medium orange
3/4 c + 2 tbsp powdered sugar

​Note: I originally made these with lacto-fermented blueberries, but I found that it didn't make much of a difference taste-wise and wasn't worth the 6 day fermentation period. If you choose to make this recipe with lacto-fermented blueberries, omit the salt in the dry ingredients. ​

DIRECTIONS

1. in a medium bowl, whisk the dry ingredients together, making sure to get out any lumps that the brown sugar might have caused.
2. thoroughly whisk the wet ingredients together in a separate bowl. 
3. pour the wet ingredients into the dry and whisk until just combined. It is okay for it to be a bit lumpy. fold in the blueberries.
4. heat your extra butter or spray in a nonstick pan on medium heat. once the butter is melted, pour 1 cup of the batter into the pan.
5. cook until the edges are slightly brown and the pancake has set up enough to slide around firmly in the pan when jiggled, about 3-5 minutes.
6. while the first pancake is cooking, whisk together the glaze ingredients. microwave for 25 seconds to make sure all of the powdered sugar is dissolved in the juice.
7. flip the pancake and cook the other side until golden, about 2-3 more minutes. 
8. remove from heat and immediately generously brush the top with the glaze. allow it to cool, and repeat steps with remaining batter.
