Grilled buffalo chicken skewers

One of my favorite meals to make as of late is grilled wings. Wings are not, however, a clean meal to take on the go or to meal prep for school lunches. When I was planning my meal prep for last week, I was craving wings, but knew that they wouldn't work for school, so I made this, the next best thing to wings. These skewers are great warm or cold, and, with an indoor grill, take less than 1 hour to make them for the whole week.

INGREDIENTS

1 lb chicken breast, cut into strips
3/4 cup buffalo wing sauce (I used sweet baby ray's wing sauce, but any will do)
1 tsp garlic powder
​1 tbsp butter, melted
bolthouse avocado ranch, or any dipping sauce of your choice
wooden skewers, soaked in water for 30 minutes

DIRECTIONS

  1. heat your indoor grill to medium/high heat or prepare your charcoal grill. 
  2. whisk the melted butter, garlic powder, and wing sauce.
  3. toss the chicken in the the buffalo sauce mixture.
  4. thread the chicken on skewers (you can place these directly on the grill, but you have to be careful when flipping them).
  5. grill the skewers, flipping every 2 minutes, until the chicken is fully cooked (exact time depends on the size of your strips).
  6. serve with avocado ranch or the dipping sauce of your choice.
