breakfast pizza with 3 ingredient dough and everything bagel crust

As far as I'm concerned, there is a breakfast trinity that I feel you could add to just about anything and call it breakfast. That would be bacon, eggs (really just the runny yolk) and caramelized onions. While caramelized onions aren't really considered a breakfast food, they just go so well with bacon that it'd be a shame to make something like this breakfast pizza without them.

This pizza dough is so simple and doesn't require any resting or anything; just combine the ingredients and roll it out! 
​

INGREDIENTS

1/2 cup of nonfat greek yogurt
1/2 cup self-rising flour, plus more as needed (alternatively, you could use 1/2 cup all-purpose flour and 1/2 tsp of baking powder)
3 tbsp garlic salt
everything bagel seasoning
3-5 tbsp marinara
3/4 cup shredded mozzarella
​4 slices of bacon, cooked 'til crisp, roughly chopped
1/8 cup caramelized onions (see my guide here)
2 tsp avocado oil
2 eggs
calabrian chili oil (optional)

DIRECTIONS

  1. preheat your oven to 425.
  2. combine the nonfat greek yogurt, garlic salt, and self-rising flour in a bowl. once it starts to come together, turn the dough out onto a cutting board or other large-ish surface and start to form the dough to the shape of your liking. I did mine pretty thin but created a crust by rolling the edges of the crust inward and smoothing the edges. the cook time of your crust will vary depending on the thickness of your crust.
  3. crack one egg into a bowl, and separate the whites from the yolk. saving the yolk for later, add 1 teaspoon of water to the whites, and whisk to combine. brush the egg white around the edges of your crust and sprinkle liberally with everything bagel seasoning.
  4. bake for approximately 20-22 minutes, checking it every so often. you want it to be golden but not too dark.
  5. remove it from the oven and top it with the marinara, mozzarella, bacon and caramelized onions. broil it in the oven until the cheese is bubbly.
  6. in a separate pan, heat the avocado oil on medium heat. once it is hot, crack the whole egg in the pan and add the yolk from earlier. cook it until the part of the egg that is in contact with the pan is set up, but the top is still jiggly. sprinkle it with salt and pepper, then top the pizza with it. 
  7. broil until the top of the egg is just set, making sure to not overcook the yolk. drizzle with calabrian chili oil if you like, slice, and serve.
